Hip Summary:
The DUO is spring valve pressure cooker with a pressure selector with four settings: high pressure (2), low pressure (1), pressure release and valve removal. Maximum operating pressure (second ring) is 14.5 psi or 100kpa. Pressure is released in the direction of the steam release selection.
Readers have reported difficulty with bringing this cooker to pressure – we have also experienced this issue. The lid needs to be locked by pushing the yellow slide completely towards the pressure selector before the cooker is brought up to pressure (sometimes with force) until a clicking sound is heard – this ensures the cooker is properly locked and can be brought up to pressure.
There is some confusion with these cookers about when to start counting the pressure cooking time because the yellow pressure indicator will rise before the selected pressure is fully reached – and if the heat is turned down at this point the cooker will loose pressure. Instead, this cooker has reached full pressure when the yellow indicator is solid (not springy) to the touch and a light stream of vapor exists the pressure selector.

If I’ve understood your chart on times for pressure canning at an altitude of around 1300 feet, I would use the low setting for canning fruit and the maximum pressure setting for everything else.
In particular in the second case, would this have a detrimental effect on the quality of the final canned product? It would obviously be safe, but would its colour and texture be badly affected?
Where can I get replacement parts for my85M7 7L pressure cooker. The slide button assembly needs to be replaced.
Thanks

I bought a new handle for my cooks essential pressure cooker and no instructions came with to help me change i cannot figure out how to keep the steam release in it. I don’t show where anything screws into it to hold it in, I love my pressure cooker and want to keep using it. Can you help me. Sondra
Sondra, please post a photo of the handle. BTW, you are posting this request on the Fagor Duo Page. Let’s talk about this under one of these manuals:

I’m trying to find out if it’s possible to test the actual internal pressure generated by my CE 85M7 Pressure Cooker/Pressure Canner. I have had it for several years and I’ve canned beans, pork, chicken, salsa, and tomatoes in it without any issues.
Because it’s getting older, I am concerned that the actual interior pressure when I’m canning may not be what the valve setting indicates, i.e., 10 lbs. or 15 lbs. Does anyone know if there is a way to test a spring-regulated pressure valve? Thank you! Tiny C
Contact your local extension office. They will test it for you.
