    I make soup using a small,8oz piece of a roast.In the soup pot ,this is simmered with onion & spices for 2-3 hrs..or longer..in slow cooker.
    Then adding a lot of different vegetables,fresh or frozen & adjusting seasoning.
    Can it be made in the Instant Pot?

    Short answer is yes.
    I am pretty sure You can use the ip as a slow cooker. Which means you can make it exactly the same

    Or you can speed the process up by using the pressure cooker function.

    Chop and Sauté the beef and onions to add maillard flavours.
    Remove a bit of the beef for later. Add water and spices.
    Cook on high pressure about 45. This will extract all the flavour out of the meat. Wait for pressure to drop. Remove the beef and onions and excess fat. Then add the raw veg and the browned meat you saved. Bring back to high pressure and cook for about 10 minutes. Quick release then stir in the frozen veg. Taste and adjust seasoning and serve.
