    If anyone has been to the Canary Islands, they will know that one of the most popular meals there is the ‘Papas Arrugadas’ – Canarian Wrinkly Potatoes (https://en.wikipedia.org/wiki/Canarian_wrinkly_potatoes).

    It is often served with two dipping sauces, (red mojo and green mojo), but it is just as good served with a pot of melted butter to dip in.

    .. worked brilliantly for me – don’t be shocked by the salt content, in fact, if I were to make any adjustments it would be to add even more salt!

    I like to serve this as a side dish, and that meant I needed another pressure cooker (OK, it ‘gave me an excuse’ to buy one). So now I have a small 3 litre stove top which is the perfect size for cooking these for my 2 person household.
