    Sorry if this is apparent but in the Instant Pot recipe book that came with the cooker is Laura’ recipe for Cream of Butternut Squash & Ginger Soup. The recipe calls for olive oil but doesn’t say when or how to add it. Should I assume it was to be used for sauteing the onion?


    It makes sense to think the olive oil is for sauteing the onion.

    You specifically saute the onion, and sometimes other vegetables you normally wouldn’t saute like celery and carrots, and spices, because the cooking time isn’t long enough to release the flavors where that’s important, which it usually is if you put in an onion to begin with.

    But if you don’t saute anyhow, you don’t need to put in the olive oil, or just add it with the liquid. It contributes subtly to the flavor.
