I made it again a few days ago. Delicious as always. I subbed in 100g of Glacé cherries for 50g Currants and 50g Sultanas And I “accidentally” used 100g of Brandy and soaked for two days. As usual since the happy accident when I worked on it, I used Panko crumbs instead of stale bread.
And while I was looking for that one, I saw a few others pop up in the search. One of Laura’s using stone fruit rather than traditional dried fruit, And a “readers Digest one that uses pineapple.
