While following recipes for sponge puddings of various types in the Good Food Pressure cooker favourites I find that the centre of the puds in all cases are underdone and soft/runny. I am using a Tower SS pc and only had it for 1 month so am at a loss as to why I cant get this right. All other recipes I have tried are OK just sponge puds. Any help please

Without having the details of either the recipe or pressure cooker, it is a bit hard to troubleshoot. But some ideas come to mind…

    1. Just cook longer. This will resolve many issues like non-standard pressure cooker, cooking at altitude, error by the author/editor, using a ceramic pot (These slow down cooking) etc.

    2. Use a ring pan. That gets rid of the troublesome centre.

    3. Don’t use a lid. Contrary to popular belief, it is unlikely that your pudding will come out swimming in water.
